Ingredients:
- 2 1/2 cups old-fashioned oats
- 1/3 cup cocoa powder, unsweetened
- 1 tsp. baking powder
- 1/4 tsp. salt
- 2 cups unsweetened soy milk
- 1 ripe banana
- 2 ripe, fresh avocados, halved, pitted, and peeled
- 1 large egg
- 2 tsp. vanilla extract
- 1/2 cup chocolate chips
Instructions:
- Preheat the oven to 375 degrees Fahrenheit. Spray a 9x9-inch square baking dish with non-stick spray.
- In a large bowl, combine the oats, cocoa powder, baking powder, and salt.
- In a food processor or blender, puree the milk, banana, avocado, egg, and vanilla until smooth.
- Pour the wet mixture into the dry mixture. Fold in the chocolate chips.
- Pour the batter into the baking dish. Bake for 30-35 minutes, until the center is firm. Remove from the oven and let cool. Slice into 9 pieces and serve warm.
Notes & Tips:
Baked oats can be stored in an airtight container in the fridge for up to 5 days or in the freezer for up to 5 months. Reheat in the microwave or in a 350 degrees Fahrenheit oven.
Make it egg free and vegan by substitution the egg with a flax egg (mix 1 tbsp of ground flax seeds with 2 ½ tbsp water to form a gel)
Make it gluten free by using gluten free certified oats.
