Ingredients:
- 2 ripe, fresh avocados, halved, pitted, and peeled
- 1 cup raw cashews
- 2-3 cups of water (for soaking)
- 1 1/2 cups plain oat milk, (may substitute with almond milk)
- 1/2 cup lightly packed fresh cilantro leaves
- 1 fresh jalapeño pepper, seeded and sliced
- 1/4 cup nutritional yeast (found in health food section of grocery store)
- 1 Tbsp. lemon juice
- 1 tsp. garlic powder
- 1/2 tsp. onion powder
- 1 tsp. salt
- 1/2 tsp. ground black pepper
Instructions:
- Place cashews into a medium saucepan, cover with water (about 2-3 cups). Bring to a boil, remove from heat, cover and let sit for 15 minutes. Drain and set aside.
- Place avocados, softened cashews, oat milk, cilantro, jalapeño, nutritional yeast, lemon juice and remaining spices in a blender. Blend on high until very smooth and creamy, about 2 minutes.
- Transfer to medium saucepan and heat over low heat until warm.
- Transfer to a small serving bowl. Garnish with additional chopped cilantro if desired.
