Creamy Vegan (Plant-based) Avocado Queso Verde

Dip fresh veggie sticks or whole grain chips into this delicious, no-fuss appetizer. The signature creamy texture and indulgent taste come from fresh avocado and non-dairy milk. Whip it up for your next gathering and you won’t miss the cheese but will appreciate all that flavor with less saturated fat.

Ingredients:

  • 2 ripe, fresh avocados, halved, pitted, and peeled
  • 1 cup raw cashews
  • 2-3 cups of water (for soaking)
  • 1 1/2 cups plain oat milk, (may substitute with almond milk)
  • 1/2 cup lightly packed fresh cilantro leaves
  • 1 fresh jalapeño pepper, seeded and sliced
  • 1/4 cup nutritional yeast (found in health food section of grocery store)
  • 1 Tbsp. lemon juice
  • 1 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1 tsp. salt
  • 1/2 tsp. ground black pepper

Instructions:

  1. Place cashews into a medium saucepan, cover with water (about 2-3 cups). Bring to a boil, remove from heat, cover and let sit for 15 minutes. Drain and set aside.
  2. Place avocados, softened cashews, oat milk, cilantro, jalapeño, nutritional yeast, lemon juice and remaining spices in a blender. Blend on high until very smooth and creamy, about 2 minutes.
  3. Transfer to medium saucepan and heat over low heat until warm.
  4. Transfer to a small serving bowl. Garnish with additional chopped cilantro if desired.

Notes & Tips:

Serve with whole grain chips or veggie sticks. Also great on tacos and burrito bowls.
