Ingredients:
- 6 large eggs
- 1/4 tsp. salt
- 1/2 tsp. pepper
- 1/4 cup Cheddar cheese, shredded
- 1/4 cup tomato, diced
- 1/4 cup fresh spinach, finely chopped
- 1/2 ripe, fresh avocado, halved, pitted, peeled, and cut into ¼ inch pieces
- Non-stick cooking spray
Instructions:
- Preheat oven to 350°F.
- In a medium bowl, whisk together eggs, salt and pepper. Stir in cheese, tomato, spinach, and avocado.
- Lightly spray donut pan with non-stick cooking spray. Spoon mixture into donut pan, dividing mixture evenly to make 8 “donuts”.
- Bake 8 to 10 minutes until eggs are cooked through. Remove from oven to cool.
- Serve once cooled or transfer to a self-sealing plastic bag or container with a tight lid and store in the refrigerator for up to 2 days.
