Recipe Description:

Kids will go googly-eyed over these silky-smooth pudding cups made with creamy, fresh avocado. With a nutritious boost from the avocado, these are a party-ready treat that parents, kids, and friends will love!

  • Recipe serving size: 1 pudding cup (heaping 1/4 cup)

Ingredients:

  • For pudding:

  • 2 ripe, fresh avocados, halved, pitted and peeled
  • 6 Tbsp. unsweetened cocoa powder
  • 1/4 cup milk of choice
  • 6 Tbsp. monk fruit sweetener
  • 2 tsp. vanilla extract
  • For eyes:

  • Banana slices, chocolate chips

Instructions:

  1. Line a muffin tin with six silicone muffin cups (or 6 small ramekins).
  2. Add all ingredients to a food processor/blender and blend until smooth, scraping down the sides as needed.
  3. Divide into cups and chill. When ready to serve, top each with two banana slices and chocolate chips for the “eyes.”

Notes & Tips:

If you prefer, 4 Tbsp. of honey may be substituted for the 6 Tbsp. of monk fruit sweetener, as honey is sweeter. (Note: This will add approximately 240 calories and 66g added sugars (33% DV) per serving).
