Peanut Butter Avocado Cookies

Ingredients:

  • 1/3 cup ripe, fresh avocados, halved, pitted, peeled and mashed
  • 2/3 cup peanut butter
  • 1 egg
  • 3 Tbsp. agave nectar or honey
  • 3/4 cup oats
  • 1/2 tsp. baking powder
  • 1/2 cup dark chocolate chips

Instructions:

  1. Combine wet ingredients until well mixed.
  2. Add dry ingredients.
  3. Stir in chocolate chips.
  4. Scoop onto baking sheet and flatten slightly with a fork.
  5. Bake at 350 degrees F for 12-14 minutes.
