Quick and Creamy Avocado Soup

Ingredients:

  • 1 ripe, fresh avocado, halved, pitted and peeled
  • 1 cup vegetable or chicken broth/bouillon (start by using 1/2 cup and add more per desired consistency)
  • 1 tsp. lemon juice
  • 1 Tbsp. non-fat plain Greek yogurt (or sour cream)
  • 1/2 tsp. herb of choice: cilantro, basil, tarragon, dill (may use more if fresh)
  • 1/4 tsp. garlic powder
  • 1/4 tsp. onion powder
  • 1/4 tsp. pepper
  • salt (to taste - broth/bouillon has salt, so may not be required)

Instructions:

  1. Place all ingredients in blender and mix until smooth, may garnish with avocado slices or cubes and dollop of yogurt or sour cream.
  2. Serve warm or cool.

Notes & Tips:

May also use as a sauce for chicken, fish, beef or pork and is great on top of tacos! Try this creamy soup or sauce as an alternative to traditional cream based soups and sauces!
