Ingredients:
- 4 (8 in.) whole wheat flour tortillas, warm
- 8 large egg whites
- 1 ripe, fresh avocado, halved, pitted, peeled and sliced
- 1 tomato, thinly sliced
- small red onion, thinly sliced
- hot sauce, to taste (optional)
Instructions:
- Heat a large non-stick skillet over medium high heat. Add egg whites and cook until center of whites are nearly set and beginning to brown around the edges. Turn and cook for another 20 seconds. Remove from heat.
- Lay tortillas flat on a work surface. Arrange all ingredients down the center of the tortilla, leaving 2-inches of empty tortilla at the bottom. Fold up bottom 2-inches. Fold over sides. Serve immediately. Add a side of fruit salad for each breakfast wrap.
