Ingredients:
- 1 ripe, fresh avocado, halved, pitted, peeled and chopped
- 2 cooked salmon fillets from Oven Roasted Salmon with Avocado Citrus Salsa
- 1 (14-ounce) can sliced new potatoes, drained
- 1/3 cup red bell pepper, finely chopped
- 3 Tbsp. scallions, chopped, divided
- 1 egg, lightly beaten
- 1 tsp. Old Bay® seasoning
- 2 Tbsp. vegetable oil
- 2 Tbsp. cilantro, chopped
- 1 Tbsp. lime juice
- 1/4 tsp. salt
- 1/8 tsp. pepper
Instructions:
- Put salmon fillets in a medium bowl and mash with a fork, breaking into small flakes.
- Finely chop potatoes and add to bowl.
- Add bell pepper, 2 tablespoons of the scallions, egg and Old Bay® seasoning, stir until mixture comes together.
- Form mixture into 4 patties.
- In a large nonstick skillet, heat oil over medium heat. Fry cakes, gently turning once, until crispy and cooked through.
- In a food processor, puree avocado, cilantro, lime juice, remaining scallion, salt and pepper until smooth.
- Serve salmon cakes with Avocado Cream Sauce and prepared salad.
