Ingredients:

  • 1 ripe, fresh avocado, halved, pitted, peeled and chopped
  • 2 cooked salmon fillets from Oven Roasted Salmon with Avocado Citrus Salsa
  • 1 (14-ounce) can sliced new potatoes, drained
  • 1/3 cup red bell pepper, finely chopped
  • 3 Tbsp. scallions, chopped, divided
  • 1 egg, lightly beaten
  • 1 tsp. Old Bay® seasoning
  • 2 Tbsp. vegetable oil
  • 2 Tbsp. cilantro, chopped
  • 1 Tbsp. lime juice
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

Instructions:

  1. Put salmon fillets in a medium bowl and mash with a fork, breaking into small flakes.
  2. Finely chop potatoes and add to bowl.
  3. Add bell pepper, 2 tablespoons of the scallions, egg and Old Bay® seasoning, stir until mixture comes together.
  4. Form mixture into 4 patties.
  5. In a large nonstick skillet, heat oil over medium heat. Fry cakes, gently turning once, until crispy and cooked through.
  6. In a food processor, puree avocado, cilantro, lime juice, remaining scallion, salt and pepper until smooth.
  7. Serve salmon cakes with Avocado Cream Sauce and prepared salad.
