Shrimp and Avocado Cocktail-tini

Ingredients:

  • 2 lb. shrimp, peeled, deveined and cooked
  • 1 Tbsp. crushed garlic
  • 1 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped, plus additional for garnish
  • 1 1/2 cups tomato and clam juice cocktail
  • 1/4 cup ketchup
  • 1/4 cup fresh lime juice
  • 1 tsp. hot pepper sauce (or to taste)
  • salt and pepper (to taste)
  • 2 ripe, fresh avocados, halved, pitted, and peeled, plus additional for garnish

Instructions:

  1. Place the shrimp in a large bowl. Stir garlic, red onion, and cilantro.
  2. Mix in tomato and clam juice cocktail, ketchup, lime juice, and hot pepper sauce. Season with salt and pepper.
  3. Gently fold in avocado.
  4. Cover, and refrigerate 2 to 3 hours. Serve in martini glasses and garnish with cilantro leaves and more avocado slices if desired.
  5. Serve with tostadas, corn chips, or crackers.
