Ingredients:
- 2 lb. shrimp, peeled, deveined and cooked
- 1 Tbsp. crushed garlic
- 1 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped, plus additional for garnish
- 1 1/2 cups tomato and clam juice cocktail
- 1/4 cup ketchup
- 1/4 cup fresh lime juice
- 1 tsp. hot pepper sauce (or to taste)
- salt and pepper (to taste)
- 2 ripe, fresh avocados, halved, pitted, and peeled, plus additional for garnish
Instructions:
- Place the shrimp in a large bowl. Stir garlic, red onion, and cilantro.
- Mix in tomato and clam juice cocktail, ketchup, lime juice, and hot pepper sauce. Season with salt and pepper.
- Gently fold in avocado.
- Cover, and refrigerate 2 to 3 hours. Serve in martini glasses and garnish with cilantro leaves and more avocado slices if desired.
- Serve with tostadas, corn chips, or crackers.
