Ingredients:

  • 1 cup canned black beans, low sodium
  • 1 cup Cherry tomatoes, halved
  • 1 cup canned garbanzo beans, low sodium
  • 1 cup canned yellow corn, no sodium
  • 1 cucumber, diced
  • 1 small red onion (or half of 1 large red onion), thinly sliced
  • 2 ripe, fresh avocados, halved, pitted, peeled and diced
  • 1/4 cup lime vinaigrette (see recipe below)
  • 2 cups mixed greens
  • 1/4 cup shelled sunflower seedes
  • Lime Vinaigrette

  • 3 limes, juiced
  • 1 garlic clove, minced
  • 1 Tbsp. Shallot, minced
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions:

  2. Whisk all ingredients together in a bowl, season to taste with salt and pepper. Set aside.

  2. In a medium-sized bowl, mix the black beans, cherry tomatoes, garbanzo beans, corn, cucumber and red onion. Add ¾ of the lime vinaigrette and stir to combine. Gently fold in the diced avocado. Set aside.
  3. Place mixed greens in a medium-sized bowl, drizzle with remaining ¼ of the lime vinaigrette and gently toss to coat.
  4. Divide the veggie salad mixture evenly onto 4 plates. Top each with ½ cup mixed greens. Garnish with sunflower seeds and enjoy!
