Ingredients:
- 1 cup canned black beans, low sodium
- 1 cup Cherry tomatoes, halved
- 1 cup canned garbanzo beans, low sodium
- 1 cup canned yellow corn, no sodium
- 1 cucumber, diced
- 1 small red onion (or half of 1 large red onion), thinly sliced
- 2 ripe, fresh avocados, halved, pitted, peeled and diced
- 1/4 cup lime vinaigrette (see recipe below)
- 2 cups mixed greens
- 1/4 cup shelled sunflower seedes
Lime Vinaigrette
- 3 limes, juiced
- 1 garlic clove, minced
- 1 Tbsp. Shallot, minced
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste

Instructions for the Lime Vinaigrette
- Whisk all ingredients together in a bowl, season to taste with salt and pepper. Set aside.
Instructions for the Salad
- In a medium-sized bowl, mix the black beans, cherry tomatoes, garbanzo beans, corn, cucumber and red onion. Add ¾ of the lime vinaigrette and stir to combine. Gently fold in the diced avocado. Set aside.
- Place mixed greens in a medium-sized bowl, drizzle with remaining ¼ of the lime vinaigrette and gently toss to coat.
- Divide the veggie salad mixture evenly onto 4 plates. Top each with ½ cup mixed greens. Garnish with sunflower seeds and enjoy!
