Ingredients:

  • 1 ripe, fresh avocado, halved, pitted, peeled and diced
  • 2 small tomatoes, seeded and chopped
  • 1/3 cup white onion, chopped
  • 1 medium jalapeño pepper, seeded and chopped
  • 2 garlic cloves, finely chopped
  • 2 Tbsp. fresh cilantro, chopped (optional)

Instructions:

  1. In a medium bowl, combine tomatoes, green onions, jalapeño pepper, and garlic.
  2. Gently fold in avocado and cilantro, if using.
  3. Serve slightly chilled or at room temperature with grilled chicken.
  4. To store, place a piece of plastic wrap directly on the surface of the salsa and refrigerate.
