Cream of Avocado Soup

Recipe Description:

Pour into espresso or sake cups for a great addition to your party buffet. Serve with mini breadsticks.

Ingredients:

  • 3 ripe, fresh avocados, halved, pitted and peeled
  • 1 cup cream
  • 2 cups chicken broth
  • 1/2 tsp. salt, or more to taste
  • 2 Tbsp. fresh lime juice, or more to taste
  • créme fraiche for garnish
  • 2 tsp. chives, chopped

Instructions:

  1. Place avocado, cream, chicken broth, salt and lime juice in a blender or food processor. Blend until smooth.
  2. Taste and add more salt and lime juice if necessary.
  3. Chill before serving with a tiny dollop of créme fraiche and a sprinkle of chopped chives.
