This avocado infused power bowl is bursting with teriyaki flavor and loaded with healthy ingredients. Recipe created by Nicole Ring, RD and Lauren Rezende, MPH, RD.

Ingredients:
- 3 cups cooked brown rice
- 1 cup cooked chicken breast, diced
- 1 ripe, fresh avocado, halved, pitted, peeled and diced
- 1 cup broccoli florets, steamed
- 1/2 cup shelled edamame
- 1/2 cup fresh carrots, shredded
- 1/4 cup teriyaki sauce
Instructions:
- To assemble, place ¾ cup of cooked rice into each bowl.
- Top each rice portion with ¼ cup cooked chicken, ¼ of diced avocado, ¼ cup cooked broccoli, 2 Tbsp edamame and 2 Tbsp shredded carrots.
- Add 1 Tbsp teriyaki sauce to each bowl (drizzled on or served on the side).
Notes & Tips:
Leftover chicken and steamed broccoli can be reheated before adding to the bowls.
