Ingredients:
- 1 large egg
- 1/2 cup cottage cheese
- 1/4 cup cucumbers, chopped
- 1/4 cup halved cherry tomatoes
- 1/2 ripe, fresh avocado, halved, pitted, peeled and sliced
- 1/4 cup orange bell pepper, chopped
- 1 Tbsp. fresh dill, chopped
- 1 tsp. everything bagel seasoning
Instructions:
- Add water to a small saucepan and bring to a simmer. Use a spoon to gently lower your egg into the saucepan. Allow to simmer for 7 minutes. Transfer to a bowl with ice water to chill for 2-3 minutes and then peel.
- To a serving bowl, add the cottage cheese, cucumber, cherry tomatoes, avocado, bell pepper, dill, everything bagel seasoning, and the hard-boiled egg.
Notes & Tips:
- Serve with whole wheat toast to round out the meal.
