Snacking made delicious, portable and simple! Enjoy these make-ahead avocado banana granola clusters straight, or with yogurt and fresh fruit. Made with fresh avocado, banana, and basic pantry staples, this crunchy treat provides a good source of fiber and can keep for up to five days. Try grabbing a handful while on the go to fuel up between meals.

Ingredients:

  • 2 cups old fashioned oats
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground cloves
  • 1/4 tsp. salt
  • 1 ripe, fresh avocado, halved, pitted, peeled and mashed
  • 1 very ripe banana, peeled and mashed
  • 3 Tbsp. agave syrup
  • 2 Tbsp. almond butter (or sunflower butter for nut-free)
  • 1 tsp. vanilla extract

Instructions:

  1. Preheat oven to 300°F. Line a baking sheet with parchment paper or foil.
  2. In a medium bowl, combine oats, cinnamon, cloves, and salt. In a separate small bowl, mash avocado and banana together until smooth. Stir in agave syrup, almond butter, and vanilla extract. Add the avocado mixture into the oats, stirring until ingredients are well combined.
  3. With a small ice cream trigger scooper, add scoop onto prepared baking sheet. Flatten with spoon to 1/2-inch thickness. Repeat to form 30 bites, placing clusters 1-inch apart on baking sheet.
  4. Bake for 40 minutes until golden brown. Remove from the oven and let cool completely.

Notes & Tips:

Use a spoon to take out mixture if you do not have an ice cream trigger scooper. Granola clusters can be stored in an airtight container for up to 5 days. For variety, add 1/3 cup dried cranberries or raisins into avocado oat mixture before baking, if desired.
