Recipe Description:

This Love One Today® fresh avocado recipe is another way to make the American Heart Association® recommendations part of your healthy lifestyle. This creamy all-fruit “ice cream” is a delicious way to boost both fruit and fiber intake. Easy to prep the night before to ensure a refreshing treat is ready for kids of all ages.

Ingredients:

  • 2 ripe, fresh avocados, halved, pitted, peeled and diced
  • 4 large ripe bananas, peeled and sliced
  • 2 tsp. fresh lime juice
  • 1 tsp. vanilla extract

Instructions:

  1. Place bananas and avocados in self-sealing plastic bag and freeze for 4 hours or overnight.
  2. Place frozen bananas, avocados, lime juice and vanilla in a food processor. Cover and puree, scraping down bowl as needed, until very smooth and creamy.
  3. Transfer mixture to a shallow plastic or glass container with a tight lid. Serve immediately, or for a firmer set, cover and place in freezer for 2 hours before serving.

Notes & Tips:

If ice cream freezes solid, allow to soften for 20 minutes prior to serving.

For additional sweetness, add 2 tablespoons sugar, honey or a sugar substitute such as monk fruit sweetener.
