Ingredients:
- 1 french baguette
- Spray oil (preferably spray avocado oil)
- 2 ripe, fresh avocados, havled, pitted and peeled
- Juice of 1 lime
- 1/2 tsp. onion powder
- 1/2 tsp. garlic powder
- 1 tsp. dried oregano, crushed
- Salt & pepper to taste (optional)
- 1/2 cup fresh pomegranate arils
- 1/3 cup crumbled fat-free feta cheese
- 3-4 Tbsp. fresh rosemary leaves, for garnish
Instructions:
Make the Toasts
- Preheat oven to 400ºF and line a baking sheet with parchment paper.
- Slice the baguette on the bias into 24 ½-inch thick pieces. Place the pieces on the parchment-lined baking sheet and lightly spray both sides of the bread with oil. Bake in the 400º oven for 6-8 minutes, turning once until golden. Remove from oven and place toasts on a serving platter.
Make the Avocado Topping
- While the toasts are cooking, combine the avocado, lime juice, onion powder, garlic powder, oregano, and salt & pepper (if using) in a medium mixing bowl and roughly mash with a fork until combined.
Compile the Bruschetta
- Top each toast with approximately 2 tsp of avocado mixture, then sprinkle the pomegranate arils and crumbled feta evenly over the top of all the toasts. Garnish each with a few fresh rosemary leaves and serve.
