Avocado Bruschetta with Pomegranate and Feta

This simple yet festive and colorful dish comes together in minutes and is a wonderful appetizer for your next gathering. The creaminess of avocado pairs beautifully with tart pomegranate, savory feta cheese and fresh herbs and is a true crowd-pleaser!

Ingredients:

  • 1 french baguette
  • Spray oil (preferably spray avocado oil)
  • 2 ripe, fresh avocados, havled, pitted and peeled
  • Juice of 1 lime
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1 tsp. dried oregano, crushed
  • Salt & pepper to taste (optional)
  • 1/2 cup fresh pomegranate arils
  • 1/3 cup crumbled fat-free feta cheese
  • 3-4 Tbsp. fresh rosemary leaves, for garnish

Instructions:

  1. Make the Toasts

  2. Preheat oven to 400ºF and line a baking sheet with parchment paper.
  3. Slice the baguette on the bias into 24 ½-inch thick pieces. Place the pieces on the parchment-lined baking sheet and lightly spray both sides of the bread with oil. Bake in the 400º oven for 6-8 minutes, turning once until golden. Remove from oven and place toasts on a serving platter.
  1. Make the Avocado Topping

  2. While the toasts are cooking, combine the avocado, lime juice, onion powder, garlic powder, oregano, and salt & pepper (if using) in a medium mixing bowl and roughly mash with a fork until combined.
  1. Compile the Bruschetta

  2. Top each toast with approximately 2 tsp of avocado mixture, then sprinkle the pomegranate arils and crumbled feta evenly over the top of all the toasts. Garnish each with a few fresh rosemary leaves and serve.
