Even the biggest pizza connoisseur will ask for multiple slices of this cauliflower crust pizza, topped with a tasty, homemade avocado pesto.

Ingredients:

  • Avocado Pesto:

  • 1 ripe, fresh avocado, halved, pitted and peeled
  • 1 cup packed fresh basil leaves
  • 2 Tbsp. olive oil
  • 1 Tbsp. lemon juice
  • 2 cloves garlic
  • ½ cup toasted walnuts
  • ½ tsp. kosher salt
  • Crust:

  • 4 cups cauliflower rice
  • 2 egg
  • ½ cup Parmesan cheese, grated
  • ½ tsp. kosher salt
  • ¼ tsp. pepper
  • Toppings:

  • 6 ounces fresh Mozzarella, sliced
  • 1 cup heirloom grape tomatoes, halved lengthwise
  • 2 Tbsp. red onion, thinly sliced
  • 1 ripe, fresh avocado, halved, pitted, peeled and diced

Instructions:

  1. Preheat oven to 450F. Line 10 x 15-inch sheet pan with parchment paper; Coat with no-stick cooking spray.
  1. Avocado Pesto:

  2. Combine avocado, basil leaves, olive oil, lemon juice, garlic, walnuts and kosher salt in blender and puree until blended; Reserve.
  1. Crust:

  2. Place cauliflower rice in microwave-safe bowl, cover and microwave until tender, 4-5 minutes; Cool and squeeze out any moisture; Combine cauliflower rice, egg, Parmesan cheese, kosher salt and pepper; Press into a baking sheet lined with parchment paper; Bake for about 10 to 15 minutes, or until golden.
  1. Toppings:

  2. Spread avocado pesto over cooked the crust; Top with Mozzarella slices, tomatoes, red onion and avocado; Bake for about 12 to 15 minutes or until cheese is melted and pizza is heated through.
