Ingredients:
Avocado Pesto:
- 1 ripe, fresh avocado, halved, pitted and peeled
- 1 cup packed fresh basil leaves
- 2 Tbsp. olive oil
- 1 Tbsp. lemon juice
- 2 cloves garlic
- ½ cup toasted walnuts
- ½ tsp. kosher salt
Crust:
- 4 cups cauliflower rice
- 2 egg
- ½ cup Parmesan cheese, grated
- ½ tsp. kosher salt
- ¼ tsp. pepper
Toppings:
- 6 ounces fresh Mozzarella, sliced
- 1 cup heirloom grape tomatoes, halved lengthwise
- 2 Tbsp. red onion, thinly sliced
- 1 ripe, fresh avocado, halved, pitted, peeled and diced
Instructions:
- Preheat oven to 450F. Line 10 x 15-inch sheet pan with parchment paper; Coat with no-stick cooking spray.
Avocado Pesto:
- Combine avocado, basil leaves, olive oil, lemon juice, garlic, walnuts and kosher salt in blender and puree until blended; Reserve.
Crust:
- Place cauliflower rice in microwave-safe bowl, cover and microwave until tender, 4-5 minutes; Cool and squeeze out any moisture; Combine cauliflower rice, egg, Parmesan cheese, kosher salt and pepper; Press into a baking sheet lined with parchment paper; Bake for about 10 to 15 minutes, or until golden.
Toppings:
- Spread avocado pesto over cooked the crust; Top with Mozzarella slices, tomatoes, red onion and avocado; Bake for about 12 to 15 minutes or until cheese is melted and pizza is heated through.
