Ingredients:
- 1 Tbsp. olive oil
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 4 cup (1lb. bag) cauliflower rice
- 1 ripe, fresh avocado, halved, pitted, peeled and mashed
- 1/4 cup water
- 3 Tbsp. fresh parsley, chopped
- 1/2 tsp. salt
- 1/4 cup reduced fat Parmesan cheese
- 1 jalapeño pepper, seeded and chopped (optional)
Instructions:
- Heat large sauté pan over medium heat. Add oil, onion and garlic and cook 2 to 3 minutes, stirring occasionally, until onion and garlic are soft. Add cauliflower and continue cooking and stirring for 8 to 10 minutes until cauliflower is just cooked through.
- Add avocado, water, parsley, salt, Parmesan cheese and jalapeño pepper, if desired, into cauliflower mixture, stirring lightly until well combined and heated through.
