Add cheer and nutrition to your holiday buffet with an edible centerpiece featuring fresh avocados. This creative display is easy enough for kids to help with.

Ingredients:

  • 2 firm-ripe, fresh avocados, halved, pitted and peeled, or more as needed
  • 1 lime, juiced
  • 1/4 tsp. sea salt
  • 1/2 cup pomegranate arils (seeds) and/or fresh raspberries
  • 1 Tbsp. dried cranberries
  • 1 green onion, white only, sliced into rounds
  • 1 starfruit or pineapple slice
  • 6 small chives
  • Chili Vinaigrette Ingredients

  • 3 Tbsp. extra virgin olive oil
  • 2 Tbsp. white wine vinegar
  • 1 tsp. chili powder
  • 1/4 tsp. dry mustard
  • 1/2 tsp. cumin
  • 1 Tbsp. cilantro, chopped
  • 1/2 Tbsp. lemon zest, grated

Instructions:

  1. Slice each avocado half into six equivalent size slices. Sprinkle avocado slices with the lime juice. On a large serving platter arrange avocado slices into the shape of a Christmas tree, as shown in the photo, leaving at least 3 inches at the top and bottom of the platter. Sprinkle with salt.
  2. Arrange pomegranate arils or raspberries, cranberries and green onions on top of the avocado tree to look like ornaments.
  3. Place the star fruit at the top point of the tree. (If star fruit is not available, use a star-shaped cookie cutter to cut a star out of a slice of pineapple).
  4. Add the chives in a criss-cross pattern over the avocado slices.
  5. Arrange crab along the bottom of the tree to resemble snow.
  6. Place chili vinaigrette ingredients together in a salad dressing carafe, cover and shake a few times to combine ingredients. Serve alongside the Avocado Christmas Tree Salad.

Notes & Tips:

Use ripe avocados that are a little on the firm side for best results, and smooth the avocado slices with a soft, food-safe paint brush dipped in lime or lemon juice.

Arrange 1/2 cup fresh crab meat along the bottom of the tree to resemble snow. Or for a festive touch, add additional pomegranate seeds, raspberries, cranberries and pineapple pieces to the bottom of the tree.
