Avocado Coco Loco Mocktail

Recipe Description:

This frozen coconut drink popular from the Caribbean is known as Coco Loco (crazy coconut) where there can be several combinations of juice or liquors. This is the mocktail version but still crazy delicious with fresh avocado.

  • Recipe serving size: 1 cup

Ingredients:

  • 2 cups coconut water, chilled (pressed coconut or with pulp)
  • 2 cups cold coconut milk beverage, unsweetened
  • 1 ripe, fresh avocado, halved, pitted and peeled
  • 2 Tbsp. fresh-squeezed lime juice (about the juice of 1 lime)
  • 1 cup of ice cubes
  • 1 Tbsp. coconut flakes for garnish
  • Ice cubes to serve

Instructions:

  1. Place coconut water, coconut milk, avocado, lime juice and a cup of ice in a blender and blend well until smooth.
  2. Serve with ice. Garnish with avocado and coconut flakes.
