These fresh avocado “cups” with sweet corn and savory nopales are ready to heat and eat in minutes.

Ingredients:

  • 1 ripe, fresh avocado, halved, pitted, and peeled
  • 1/4 cup corn kernels (canned or frozen)
  • 2 Tbsp. cooked nopales, diced
  • 2 Tbsp. reduced fat Cheddar cheese, shredded
  • salt and pepper, to taste

Instructions:

  1. Top avocado halves with corn, nopales and shredded cheese, dividing ingredients evenly. Microwave for 30 to 45 seconds until cheese just begins to melt.
