Ingredients:
- 1 ripe, fresh avocado, halved, pitted, and peeled
- 1/4 cup corn kernels (canned or frozen)
- 2 Tbsp. cooked nopales, diced
- 2 Tbsp. reduced fat Cheddar cheese, shredded
- salt and pepper, to taste
Instructions:
- Top avocado halves with corn, nopales and shredded cheese, dividing ingredients evenly. Microwave for 30 to 45 seconds until cheese just begins to melt.
