Avocado Dark Chocolate Mousse

Recipe Description:

This decadent chocolate mousse comes together easily in minutes and is so rich and delicious you’ll never believe that it is nutrient-dense and contains no added sugars. A perfect way to satisfy your sweet tooth!

Ingredients:

  • 1/4 cup pitted dates (approximately 6-8 dates)
  • 2 cups boiling water (for soaking dates)
  • 1 ripe, fresh avocado, halved, pitted and peeled
  • 2 ripe bananas
  • 1/4 cup raw cacao powder
  • 1 tsp. vanilla extract
  • Raspberries for topping (optional)

Instructions:

  1. Place dates in a heat-proof bowl and cover with boiling water to soak for 10 minutes.
  2. Drain dates and place the soaked dates in a food processor or blender with avocado, bananas, cacao powder and vanilla. Blend until smooth and creamy, scraping down the sides as necessary.
  3. Divide evenly into 4 small bowls, ramekins, or serving glasses and place in refrigerator to chill and set for at least 30 minutes.
  4. Top with raspberries if desired and serve.

Notes & Tips:

Make this look ultra fancy and garnish with fresh raspberries and shavings of dark chocolate.
