These baked egg rolls made with good fats from avocados are simple enough to throw together to wow your guests at your next gathering.

Ingredients:

  • Egg Rolls:

  • 1 ripe, fresh avocado, halved, pitted, peeled and diced
  • 1 plum tomato, chopped (about ½ cup)
  • 2 Tbsp. red onion, chopped
  • 2 Tbsp. cilantro, chopped
  • 1/4 tsp. kosher salt
  • 8 egg roll wrappers
  • 1 Tbsp. olive oil
  • Dipping Sauce:

  • 1 cup cilantro leaves
  • 1/3 cup olive oil
  • 1/2 ripe, fresh avocado, halved, pitted, peeled and mashed
  • 2 Tbsp. lime juice
  • 1 Tbsp. jalapeño, minced
  • 1 clove garlic
  • ½-inch piece fresh ginger, peeled
  • ¼ tsp. kosher salt

Instructions:

  1. Egg Roll:

  2. Preheat oven to 400F. Brush sheet pan with olive oil.
  3. Combine avocado, tomato, onion, chopped cilantro and ¼ tsp. kosher salt.
  4. Place filling diagonally on wrapper; Fold bottom corner up and over filling; Fold in both sides; Wet top corner with water and roll wrap up to seal; Arrange, seam side down, on prepared baking sheet.
  5. Lightly brush egg rolls with 1 Tbsp. olive oil; Bake 12-14 minutes or until golden and crispy.
  1. Dipping Sauce:

  2. Combine cilantro leaves, olive oil, avocado, lime juice, jalapeño, garlic, ginger and ¼ tsp. kosher salt in blender and puree until combined; Serve with egg rolls.
