Ingredients:
Egg Rolls:
- 1 ripe, fresh avocado, halved, pitted, peeled and diced
- 1 plum tomato, chopped (about ½ cup)
- 2 Tbsp. red onion, chopped
- 2 Tbsp. cilantro, chopped
- 1/4 tsp. kosher salt
- 8 egg roll wrappers
- 1 Tbsp. olive oil
Dipping Sauce:
- 1 cup cilantro leaves
- 1/3 cup olive oil
- 1/2 ripe, fresh avocado, halved, pitted, peeled and mashed
- 2 Tbsp. lime juice
- 1 Tbsp. jalapeño, minced
- 1 clove garlic
- ½-inch piece fresh ginger, peeled
- ¼ tsp. kosher salt
Instructions:
Egg Roll:
- Preheat oven to 400F. Brush sheet pan with olive oil.
- Combine avocado, tomato, onion, chopped cilantro and ¼ tsp. kosher salt.
- Place filling diagonally on wrapper; Fold bottom corner up and over filling; Fold in both sides; Wet top corner with water and roll wrap up to seal; Arrange, seam side down, on prepared baking sheet.
- Lightly brush egg rolls with 1 Tbsp. olive oil; Bake 12-14 minutes or until golden and crispy.
Dipping Sauce:
- Combine cilantro leaves, olive oil, avocado, lime juice, jalapeño, garlic, ginger and ¼ tsp. kosher salt in blender and puree until combined; Serve with egg rolls.
