Recipe Description:

The smooth and creamy avocado teams up with rich feta, crispy apple and juicy cucumber to deliver a deliciously satisfying lunch.

Ingredients:

  • 1 ripe, fresh avocado, halved, pitted, peeled and sliced
  • 2 Tbsp. lime juice
  • 2 Tbsp. olive oil
  • 1 Tbsp. fresh mint, chopped
  • 1 1/2 cup baby arugula
  • 1 apple, cored, sliced
  • 1/4 English cucumber, peeled, sliced
  • 6 thin slices Feta cheese
  • 8 slices bread

Instructions:

  1. In a medium bowl combine lime juice, oil, mint and salt and stir in arugula.
  2. Place avocado slices on 4 slices of the bread. Top each with apple, cucumber and Feta cheese. Divide arugula salad over all. Top with remaining 4 slices of bread.

Notes & Tips:

Use hearty multi-grain bread, or stuff contents in to a pita for a meal on-the-go.
