Pumpkin and Avocado Halloween Snack

Recipe Description:

Turn simple ingredients like rolled oats, peanut butter, pumpkin puree, and creamy avocados into adorable jack-o-lanterns! Decorate these Halloween bites with chocolate morsels and pretzel sticks to impress your loved ones with these spookily yummy treats.

Ingredients:

  • 1 cup raw rolled oats
  • 1 ripe, fresh Hass Avocado halved, pitted, peeled
  • 1/4 cup 100% pumpkin puree
  • 1/4 cup peanut butter
  • 1 1/2 tsp. ground cinnamon
  • 1 pinch of salt
  • 2 Tbsp. mini chocolate chips (optional)

Instructions:

  1. In a food processor, process the oats until coarse flour.
  2. Add avocado, and pumpkin puree, process until blended.
  3. Scrape sides with a spatula and add peanut butter, cinnamon and salt and process until all is well blended. The mixture will be soft and sticky.
  4. Place in a container in the freezer for 30 minutes. This is to allow time for flavors to incorporate.
  5. Remove from the freezer and roll into 12 bite-sized balls using your palms. Place on a tray lined with parchment paper and place back in the freezer for another 15 minutes. This will help hold their shape.
  6. Remove from the freezer and decorate with mini chocolate morsels and pretzel sticks. Serve within an hour or store in the fridge for up to three days.

Optional: To decorate roll avocado balls with:
  • Cacao powder

  • Chia seeds

  • Hemp seeds

  • Ground flaxseed

  • Shredded unsweetened coconut flakes

  • Crushed almonds

  • Sunflower seeds


Other variations to add in the recipe are:
  • Add two tablespoon of protein powder for extra protein, any flavor

  • Add two tablespoon of hemp seeds, ground flaxseed, chia seeds or cacao powder to the mixture.
