Ingredients:
For the vinaigrette:
- 1 Tbsp. lime juice
- 2 Tbsp. olive oil
- 2 Tbsp. apple cider vinegar
- 1/2 tsp. Dijon mustard
- 1/4 tsp. honey
For the filling:
- 1 tsp. olive oil
- 1/4 cup fresh pineapple, diced
- 1/4 cup corn kernels (canned)
- Salt and pepper to taste
To assemble:
- 2 Tbsp. green onions, chopped
- 1 ripe, fresh avocado, halved, pitted and peeled – use each half as a bowl
Instructions:
- In a small bowl, mix lime juice, 3 Tbsp. olive oil, vinegar, Dijon mustard, and honey to make the vinaigrette.
- Heat 1 Tbsp. of olive oil in a pan over medium-high heat. Add pineapple and corn, salt and pepper to taste, cooking until lightly browned (about 2-4 minutes). Let cool.
- Toss the cooked pineapple and corn in the vinaigrette. Add chopped green onions and gently mix.
- Scoop the mixture into the avocado halves.
