Ingredients:

  • For the vinaigrette:

  • 1 Tbsp. lime juice
  • 2 Tbsp. olive oil
  • 2 Tbsp. apple cider vinegar
  • 1/2 tsp. Dijon mustard
  • 1/4 tsp. honey
  • For the filling:

  • 1 tsp. olive oil
  • 1/4 cup fresh pineapple, diced
  • 1/4 cup corn kernels (canned)
  • Salt and pepper to taste
  • To assemble:

  • 2 Tbsp. green onions, chopped
  • 1 ripe, fresh avocado, halved, pitted and peeled – use each half as a bowl

Instructions:

  1. In a small bowl, mix lime juice, 3 Tbsp. olive oil, vinegar, Dijon mustard, and honey to make the vinaigrette.
  2. Heat 1 Tbsp. of olive oil in a pan over medium-high heat. Add pineapple and corn, salt and pepper to taste, cooking until lightly browned (about 2-4 minutes). Let cool.
  3. Toss the cooked pineapple and corn in the vinaigrette. Add chopped green onions and gently mix.
  4. Scoop the mixture into the avocado halves.
  5. Enjoy!
