Recipe Description:

Hot chocolate with the creaminess of an avocado and no added sugars. Surprisingly delicious and it provides a good source of fiber.

Ingredients:

  • 4 cups unsweetened vanilla almond milk
  • 2 ripe, fresh avocados, halved, pitted, peeled
  • 4 Tbsp. monk fruit sweetener
  • 1 Tbsp. cold water
  • 2 Tbsp. unsweetened cacao powder, divided
  • 1 tsp. ground cinnamon
  • 1/2 tsp. vanilla extract

Instructions:

  1. In a small bowl, combine avocado and monk fruit sweetener with a fork until avocado is mashed and pudding-like. Add water and one tablespoon of cacao powder and mix until well combined. Set aside.
  2. In a medium size saucepan, warm milk over medium heat. Whisk in the remaining tablespoon of cacao powder, ground cinnamon and vanilla extract. Bring it to a slight boil, reduce heat and whisk until everything is well combined. Remove from heat.
  3. Use a hand blender to blend avocado mixture in the saucepan with the warm milk. Blend for 30 seconds until the liquid is smooth and frothy.
  4. Pour into 4 mugs and serve hot.

Notes & Tips:

If not using a hand blender, blend in small batches the warm milk with the avocado mixture in a regular blender. This is to avoid overflowing and be cautious when blending hot liquids.
