Firm avocados are prefect to pickle at home and keep as a staple in your fridge – to top your favorite sandwiches or enjoy on their own.

Ingredients:

  • 2 unripe, fresh avocados, halved, pitted, peeled and sliced (about 2 cups)
  • ½ cup grape tomatoes, halved lengthwise
  • 2 cloves garlic, sliced
  • 1-inch piece fresh ginger, peeled and thinly sliced
  • 1 Tbsp. mustard seeds
  • 1 tsp. peppercorns
  • 2 cilantro sprigs
  • 1 cup white vinegar
  • 1 cup water
  • 1 Tbsp. kosher salt
  • 1 Tbsp. sugar

Instructions:

  1. Place avocados, tomatoes, garlic, ginger, mustard seeds, peppercorns and cilantro in 2 (16 oz. each) canning jars.
  2. Bring vinegar, water, kosher salt and sugar to a boil. Heat until salt and sugar are dissolved.
  3. Pour hot vinegar mixture over avocados in canning jars to cover, adding additional water if necessary. Cool to room temperature then refrigerate at least 48 hours.
