Ingredients:
- 2 unripe, fresh avocados, halved, pitted, peeled and sliced (about 2 cups)
- ½ cup grape tomatoes, halved lengthwise
- 2 cloves garlic, sliced
- 1-inch piece fresh ginger, peeled and thinly sliced
- 1 Tbsp. mustard seeds
- 1 tsp. peppercorns
- 2 cilantro sprigs
- 1 cup white vinegar
- 1 cup water
- 1 Tbsp. kosher salt
- 1 Tbsp. sugar
Instructions:
- Place avocados, tomatoes, garlic, ginger, mustard seeds, peppercorns and cilantro in 2 (16 oz. each) canning jars.
- Bring vinegar, water, kosher salt and sugar to a boil. Heat until salt and sugar are dissolved.
- Pour hot vinegar mixture over avocados in canning jars to cover, adding additional water if necessary. Cool to room temperature then refrigerate at least 48 hours.
