Avocado Piña Colada Mocktail

Recipe Description:

This refreshing avocado piña colada is sweet without adding sugar. Avocado and fresh pineapple adds the perfect creaminess to this mocktail piña colada.

Ingredients:

  • 1 1/2 cups fresh pineapple pieces
  • 1 cup ice cubes
  • 2 cups coconut milk beverage, unsweetened, vanilla
  • 1 ripe, fresh avocado, halved, pitted and peeled
  • 2 Tbsp. unsweetened coconut flakes
  • Ice cubes to serve

Instructions:

  1. Place pineapple, ice, coconut milk, avocado, and coconut flakes in a blender in the order listed and blend until smooth.
  2. Serve over ice, garnish with a slice of pineapple, and avocado. It is ready to serve.

Notes & Tips:

If using frozen pineapple, blend frozen pineapple with ½ cup of water first for a few minutes, then add the rest of the ingredients including the ice cubes.
