Ingredients:

  • 1 ripe, fresh avocado, halved, pitted, peeled and diced
  • 3 (6 oz.) cans of water-packed tuna, drained
  • 2 scallions, thinly sliced
  • 3 radishes, thinly sliced
  • 2 tsp. capers
  • 2 Tbsp. fresh lemon juice
  • 1 Tbsp. olive oil
  • 1/3 cup fresh parsley leaves

Instructions:

  1. In a medium bowl combine all ingredients.
  2. Toss gently to combine.

Notes & Tips:

Serve with crackers or over mixed greens.
