Ingredients:
- 1 lb. medium shrimp, deveined, peeled, cooked
- 2 fresh avocado, halved, pitted, peeled, sliced and divided
- 1/4 cup salsa verde, homemade or store-bought
- 2 Tbsp. water
- 2 Tbsp. fresh lime juice
- 1 Tbsp. honey
- 1/4 tsp. ground cayenne pepper
- 1 medium-sized cucumber, peeled, seeded, diced
- 1 mango, peeled, seeded, diced
- 1 medium-sized sweet pepper, seeded, diced
- 1/2 cup cilantro leaves, chopped
- salt and fresh ground pepper (to taste)
- 1 (10 oz.) bag of baby spinach leaves
Instructions:
- Place one half of one avocado, water, salsa verde, lime juice and honey in a blender.
- With the blender on puree setting, blend until smooth.
- In a large bowl, combine the shrimp, cucumber, mango, red pepper and cilantro.
- Divide spinach and remaining avocado onto six plates, top with shrimp mixture and drizzle with dressing.
