Ingredients:
- 1 cup avocado salad from Avocado Grain Bowl
- 1 ripe, fresh avocado, halved, pitted, peeled and diced
- 8 (6-inch) corn tortillas
- 1 1/3 cup black beans
- 24 shrimp
- 1/4 cup cilantro, chopped
Instructions:
- Heat oven to 350 degrees F.
- Make avocado salad. If already made, drain.
- Add fresh avocado, mix and set aside.
- Wrap tortillas in foil. Bake for about 10 minutes or until hot.
- In a small microwavable bowl, heat the beans until warm and mash with a potato masher.
- To serve, spread each warmed tortilla with 2 tablespoons mashed beans, top with 3 shrimp and 1/2 cup avocado salad.
- Sprinkle with chopped cilantro.
