Ingredients:
- 1 lb. package refrigerated whole wheat pizza dough
- 2 tsp. olive oil
- 1 red onion, thinly sliced
- 1 lb. lean ground beef
- 1 tsp. ancho chili powder
- 3/4 tsp. kosher salt
- 1/4 tsp. ground black pepper
- 2 ripe, fresh avocados, halved, pitted, peeled and mashed
- 1 cup baby arugula, loosely packed
Instructions:
- Preheat oven to 375 degrees F. Spray a baking sheet with non-stick cooking spray.
- To make slider buns, divide dough into 10 equal pieces. Roll into balls and place on prepared baking sheet. Flatten to 2-inches across. Bake for 16 minutes or until lightly golden brown. Remove from heat and set aside.
- Meanwhile, place oil in a large skillet over medium heat. Add onions and cook, stirring often, until golden brown, about 12 minutes. Transfer to a plate.
- Place ground beef, chili powder, salt and pepper in a medium bowl. Use your hands to incorporate spices into the meat. Divide mixture into 10 equal pieces. Form into thin patties, about 3-inches across.
- Return large skillet to medium high heat. Add patties and cook until browned, about 3 minutes. Turn and cook until meat is cooked through, about 2 minutes more. Remove from heat.
- Slice buns in half. Place arugula, onions, burger patties and avocado on bun bottoms. Place bun tops on top and serve immediately.
