Ingredients:

  • 1 small jicama, peeled and cut as instructed below
  • 6 fresh strawberries, washed, stems removed and cut in half lengthwise
  • 1 ripe, fresh avocado, halved, pitted, peeled and cut into 24 bite-sized pieces
  • 12 8-inch wooden skewers

Instructions:

  1. Cut one, 1/2-inch thick, horizontal slice from the center of the jicama. Cut this slice into 1/2-inch wide strips and then cut these strips into 1/2-inch cubes to create 12, “jicama hat” tops. Next, cut four, 1/4-inch thick, horizontal slices from the center of the jicama. Cut these slices into 1-inch wide strips and then cut these strips into 1 1/2-inch long rectangles to create 12, “jicama hat” bottoms. The number of slices of jicama needed to create “jicama hats” may depend on the size of the jicama.
  2. Stack each skewer with two pieces of avocado, one 1 1/2-inch rectangular “jicama hat” bottom, one strawberry half and one 1/2-inch cube “jicama hat” top.

Notes & Tips:

Sprinkle avocado pieces with lemon or lime juice to prevent browning.
