Avocado Stuffed Jalapeño Poppers

Jalapeño poppers are a crowd-pleasing appetizer but traditional fillings can drive up the saturated fat content. This tasty recipe uses fresh avocado as the filling with just a sprinkle of sharp Cheddar on top.

Ingredients:

  • 6 large jalapeño peppers, cut in half lengthwise and seeded
  • 2 ripe, fresh avocados, halved, pitted and peeled
  • 2 Tbsp. red onion, finely minced
  • 1/2 tsp. Italian seasoning blend
  • 1/4 tsp. salt
  • 6 Tbsp. (1.5 oz.) finely shredded sharp Cheddar cheese

Instructions:

  1. Preheat oven to 425°F. Line a baking sheet with aluminum foil.
  2. Mash avocado with a fork in a small bowl until smooth. Stir in red onion, Italian seasoning and salt. Fill jalapeño halves with the avocado mixture, dividing mixture equally. Top each jalapeño half with 1/2 Tbsp. shredded Cheddar cheese.
  3. Place jalapeño halves on baking sheet and bake for 15 minutes until cheese is melted and jalapeños are lightly roasted.
  4. Remove from oven to cool until warm.
