Jalapeño poppers are a crowd-pleasing appetizer but traditional fillings can drive up the saturated fat content. This tasty recipe uses fresh avocado as the filling with just a sprinkle of sharp Cheddar on top.

Ingredients:
- 6 large jalapeño peppers, cut in half lengthwise and seeded
- 2 ripe, fresh avocados, halved, pitted and peeled
- 2 Tbsp. red onion, finely minced
- 1/2 tsp. Italian seasoning blend
- 1/4 tsp. salt
- 6 Tbsp. (1.5 oz.) finely shredded sharp Cheddar cheese
Instructions:
- Preheat oven to 425°F. Line a baking sheet with aluminum foil.
- Mash avocado with a fork in a small bowl until smooth. Stir in red onion, Italian seasoning and salt. Fill jalapeño halves with the avocado mixture, dividing mixture equally. Top each jalapeño half with 1/2 Tbsp. shredded Cheddar cheese.
- Place jalapeño halves on baking sheet and bake for 15 minutes until cheese is melted and jalapeños are lightly roasted.
- Remove from oven to cool until warm.
