Try this protein-packed spin on the classic avocado toast. After adding the avocado you’ll top with a grillable cheese (like halloumi), grated hard- boiled egg, honey, and red pepper flakes – a combo you’ll want to make on repeat!

Ingredients:
- 1 large egg
- Olive oil cooking spray
- 1 oz. halloumi (or other grillable cheese like queso panela), cut into 1/4 in. slices
- 1/3 ripe, fresh avocado, pitted, and peeled
- 1 slice whole wheat bread
- 1/4 tsp. honey
- Dash red pepper flakes
Instructions:
- Add egg to a small saucepan and cover with cold water. Bring to a boil over medium high heat. Turn off the heat and cover, then let sit for 10 minutes. Drain and place in a bowl of ice water to cool. Once cooled, peel your egg and use the smallest side of a box grater to grate the egg into small pieces.
- Spray a small skillet with cooking spray and place over medium heat. Add the halloumi slices in a single layer. Cook for 45 seconds to 1 minute then flip with a fork or spatula. Cook on the second side for up to a minute or until golden brown. Remove from heat and set aside.
- Spray the hot skillet that you used for the halloumi with a bit more cooking spray then add the whole wheat bread. Toast the bread on each side for 30 seconds to one minute or until golden brown.
- Use a fork to mash the avocado onto the top of the toasted bread. Arrange the halloumi slices over the avocado then top with the shredded egg. Drizzle with the honey and add a dash of red pepper flakes to serve.
