These roll-ups can be whipped up in no time as an after-school snack, or as a mid-day pick-me-up at work. With only four ingredients, snack time couldn’t be any easier.

Ingredients:
- 1 ripe, fresh avocado, halved, pitted, peeled and cut into eighth
- 8 thick slices turkey
- 1 Persian cucumber, cut into 8 spears
- 1/4 cup loose greens, such as arugula or watercress (optional)
Instructions:
- In center of each turkey slice, arrange one slice avocado and one spear cucumber.
- Add greens if desired.
- Fold one side of the turkey slice over filling to create roll-up.
