Recipe Description:

These roll-ups can be whipped up in no time as an after-school snack, or as a mid-day pick-me-up at work. With only four ingredients, snack time couldn’t be any easier.

Ingredients:

  • 1 ripe, fresh avocado, halved, pitted, peeled and cut into eighth
  • 8 thick slices turkey
  • 1 Persian cucumber, cut into 8 spears
  • 1/4 cup loose greens, such as arugula or watercress (optional)

Instructions:

  1. In center of each turkey slice, arrange one slice avocado and one spear cucumber.
  2. Add greens if desired.
  3. Fold one side of the turkey slice over filling to create roll-up.
