Ingredients:
- 4 baked apple rings or apple chips, sprinkled with cinnamon
- 1 ripe, fresh avocado, halved, pitted, peeled and mashed
- 2 Tbsp. feta cheese crumbles
- 1 Tbsp. pumpkin seeds
Instructions:
- Preheat oven or toaster oven to 350°F. Place apple rings on a baking sheet and toast for about 8–10 minutes, or until lightly crisped.
- While the apple rings toast, mash the ripe avocado in a small bowl until smooth.
- Remove apple rings from the oven and let them cool slightly.
- Spread a layer of mashed avocado over each apple ring.
- Top with feta cheese crumbles.
- Sprinkle with pumpkin seeds.
- Serve immediately and enjoy!
