Ingredients:

  • 4 baked apple rings or apple chips, sprinkled with cinnamon
  • 1 ripe, fresh avocado, halved, pitted, peeled and mashed
  • 2 Tbsp. feta cheese crumbles
  • 1 Tbsp. pumpkin seeds

Instructions:

  1. Preheat oven or toaster oven to 350°F. Place apple rings on a baking sheet and toast for about 8–10 minutes, or until lightly crisped.
  2. While the apple rings toast, mash the ripe avocado in a small bowl until smooth.
  3. Remove apple rings from the oven and let them cool slightly.
  4. Spread a layer of mashed avocado over each apple ring.
  5. Top with feta cheese crumbles.
  6. Sprinkle with pumpkin seeds.
  7. Serve immediately and enjoy!
