Egg, bean and avocado guacamole stuffed mini tacos will keep you energized throughout the morning.

Ingredients:

  • Guacamole:

  • 1 ripe, fresh avocado, halved, pitted, peeled and mashed
  • 1 – 2 chipotle chilies in adobo, to taste
  • 2 tsp. lime juice
  • 1/4 tsp. salt
  • Tacos:

  • nonstick cooking oil spray
  • 2 Tbsp. onions, diced
  • 6 large eggs, beaten
  • 1/4 cup cilantro, chopped, divided
  • 1/4 tsp. ground black pepper
  • 12 4-inch corn tortillas, warm
  • 3/4 cup cooked black beans, warm
  • 1/4 cup pico de gallo, homemade or store bought

Instructions:

  1. To prepare guacamole:

  2. Combine avocado, chilies, lime juice and salt in small bowl.
  1. To prepare tacos:

  2. Spray medium nonstick pan with nonstick spray and heat on medium high. Add onions and cook, stirring frequently, for 2 minutes until softened.
  3. Lower heat to medium and pour in eggs, sprinkle with pepper and 2 tablespoons cilantro. Cook for 2 to 3 minutes, using a spatula to turn eggs, until cooked through; remove from heat.
  4. Fill tortillas with egg, black beans, salsa, guacamole and remaining cilantro, dividing evenly.
