Ingredients:
Guacamole:
- 1 ripe, fresh avocado, halved, pitted, peeled and mashed
- 1 – 2 chipotle chilies in adobo, to taste
- 2 tsp. lime juice
- 1/4 tsp. salt
Tacos:
- nonstick cooking oil spray
- 2 Tbsp. onions, diced
- 6 large eggs, beaten
- 1/4 cup cilantro, chopped, divided
- 1/4 tsp. ground black pepper
- 12 4-inch corn tortillas, warm
- 3/4 cup cooked black beans, warm
- 1/4 cup pico de gallo, homemade or store bought
Instructions:
To prepare guacamole:
- Combine avocado, chilies, lime juice and salt in small bowl.
To prepare tacos:
- Spray medium nonstick pan with nonstick spray and heat on medium high. Add onions and cook, stirring frequently, for 2 minutes until softened.
- Lower heat to medium and pour in eggs, sprinkle with pepper and 2 tablespoons cilantro. Cook for 2 to 3 minutes, using a spatula to turn eggs, until cooked through; remove from heat.
- Fill tortillas with egg, black beans, salsa, guacamole and remaining cilantro, dividing evenly.
