Recipe Description:

Celebrate your senses with this colorful salad of creamy avocado slices and juicy red watermelon squares topped by tangy cheese crumbles, zesty peppers and crunchy seeds. Each serving provides an excellent source of vitamin A. Even better, when eaten alongside other foods like in this salad, avocados act as a nutrient booster and help increase the body’s absorption of fat-soluble vitamin A.

Ingredients:

  • 1 tsp. olive oil
  • Kosher salt (to taste)
  • 1/4 cup pumpkin seeds, shelled
  • 1 ripe, fresh avocado, halved, pitted, peeled and sliced
  • 2 cups watermelon, cut in 1/2-inch pieces
  • 1 fresh lime, cut in half
  • 1 serrano pepper or jalapeño pepper
  • 3 oz. Feta cheese, crumbled
  • 1/4 cup fresh cilantro leaves

Instructions:

  1. Heating the olive oil in a small saucepan over medium heat. Add pumpkin seeds and lightly toast until just fragrant and starting to brown, about 2 minutes. Season lightly with salt to taste.
  2. Arrange watermelon and avocado on a serving plate. Squeeze the juice from one half of the lime on top of the watermelon and avocado.
  3. Slice the jalapeño pepper into thin round slices, remove and discard any seeds or ribbing. Scatter the pepper slices and Feta cheese on top of the watermelon and avocado.
  4. Squeeze the juice from the other half of the lime on top of the salad. Top with cilantro leaves.

Notes & Tips:

Optional: Add 1/8 to 1/4 tsp. dried red pepper flakes for a little spice.
