This chilled soup recipe is easy to make and great for hot summer days. Blend avocado, cucumber, lettuce, green pepper, and herbs until smooth for a refreshing and creamy, cold soup entrée or starter.

Ingredients:
- 2 ripe, fresh avocados, halved, pitted, peeled and diced
- 1 cucumber, peeled, seeded, diced
- 2 Tbsp. fresh dill, chopped
- 2 cups romaine lettuce, hand-torn
- 1 green pepper, diced
- 2 scallions, thinly sliced
- 2 tsp. garlic, chopped
- 1 cup water
- 1 fluid oz. vodka (optional)
- vinegar (to taste)
- lemon juice (to taste)
Instructions:
- Place all of the ingredients except vinegar and lemon juice in a blender. Purée until smooth.
- Season with vinegar and lemon juice, to taste. Consistency of soup may be adjusted by adding more water.
- Serve chilled.
