Ingredients:

  • 3 Tbsp. all-purpose flour
  • 2 Tbsp. unsweetened cocoa powder
  • 1 1/2 Tbsp. monk fruit and erythritol blend (one-to-one white sugar replacement)
  • 1/4 tsp. baking powder
  • 2 Tbsp. ripe, fresh avocado, halved, pitted, peeled and mashed
  • 3 Tbsp. reduced-fat milk
  • 1 Tbsp. water
  • 1/4 tsp. vanilla extract

Instructions:

  1. Place flour, cocoa powder, sugar replacement blend and baking powder in a 10 to 12 ounce microwave-safe mug.
  2. Stir in avocado, milk, water and vanilla until blended.
  3. Microwave for 90 seconds to 2 minutes or until cake has puffed up and is cooked through. (Timing will differ depending on wattage of your microwave).

Notes & Tips:

White sugar may be used in place of the monk sugar and erythritol sugar replacement blend.
