Ingredients:
- 3 Tbsp. all-purpose flour
- 2 Tbsp. unsweetened cocoa powder
- 1 1/2 Tbsp. monk fruit and erythritol blend (one-to-one white sugar replacement)
- 1/4 tsp. baking powder
- 2 Tbsp. ripe, fresh avocado, halved, pitted, peeled and mashed
- 3 Tbsp. reduced-fat milk
- 1 Tbsp. water
- 1/4 tsp. vanilla extract
Instructions:
- Place flour, cocoa powder, sugar replacement blend and baking powder in a 10 to 12 ounce microwave-safe mug.
- Stir in avocado, milk, water and vanilla until blended.
- Microwave for 90 seconds to 2 minutes or until cake has puffed up and is cooked through. (Timing will differ depending on wattage of your microwave).
