Ingredients:
Avocado Kale Mixture
- 1 large, ripe, fresh avocado, halved, pitted and peeled
- 1/2 banana
- 1 cup baby kale leaves
- 1/2 cup coconut water
- 1 tsp. lime juice (optional)
Strawberry Banana Mixture
- 1 cup trimmed strawberries
- 1/2 banana
- 1/2 cup coconut water
- 2 Tbsp. chia seeds
- 1 tsp. lime juice (optional)
Toppings (optional)
- granola
- coconut, flaked
- strawberries, sliced
Instructions:
Strawberry Banana Mixture
- Combine strawberries, banana, coconut water, chia seeds and lime juice, in blender and puree until smooth. Refrigerate until chilled and thickened, at least 30 minutes.
Avocado Kale Mixture
- In clean blender, combine baby kale, avocado, banana, coconut water and lime juice and puree until smooth. Refrigerate until chilled, at least 30 minutes.
Smoothie Bowl
- Pour Strawberry Banana mixture on one side of serving bowl and Avocado Kale mixture on other side of serving bowl.
- Top with fresh coconut.
