This guacamole adds a tart cranberry twist to a classic. Great for Thanksgiving or as a fruity twist on traditional guacamole dip.

Ingredients:
- 4 ripe, fresh avocados, halved, pitted and peeled
- 1/2 cup salsa verde, fresh or from a can
- 3 Tbsp. fresh parsley leaves, chopped
- 1 jalapeño pepper, seeded, deveined, finely chopped
- 1 tsp. coarse sea salt
- 1/4 to 1/2 tsp. garlic, minced (to taste)
- 2/3 cup dried cranberries soaked in hot water, drained, squeezed dry
- 1/2 cup Cotija cheese, crumbled, for garnish (optional)
Salsa Verde Ingredients
- 2 1/2 tomatillos, husked, rinsed
- 1 Tbsp. fresh cilantro, chopped
- 1/4 onion, chopped
- 3/4 garlic clove, chopped
- 1/2 jalapeño pepper, seeded, deveined, finely chopped
- salt and pepper (to taste)
Instructions:
- Coarsely mash avocados.
- Fold in remaining ingredients and serve.
- Top with cheese to garnish
- Salsa Verde Instructions:
- Place tomatillos in a saucepan, cover with water. Bring to a boil and simmer for 5 minutes. Remove from heat.
- Drain tomatillos and place in food processor with other ingredients. Blend to desired consistency. Cool in refrigerator.
