Recipe Description:

This creamy avocado dip is a fun take on the viral butter board. Blend up the simple avocado spread then top with pomegranate, walnuts, balsamic glaze, and goat cheese for a festive appetizer.

Ingredients:

  • 2 ripe, fresh avocados, halved, pitted and peeled
  • 1/3 cup plain, unsweetened Greek yogurt
  • 1 clove garlic
  • 1 green onion
  • 2 Tbsp. lemon juice
  • 1/2 tsp. lemon zest
  • 1/2 tsp. salt
  • 1/4 cup pomegranate arils
  • 1/4 cup chopped walnuts
  • 1 oz. crumbled goat cheese
  • 1 1/2 Tbsp. balsamic glaze
  • Fresh thyme (for garnish)

Instructions:

  1. Add the avocados, Greek yogurt, garlic, onion, lemon juice, zest, and salt to a food processor and puree until smooth.
  2. Spread the avocado dip onto a serving board and top with pomegranate seeds, walnuts, goat cheese, and balsamic glaze.
  3. Serve with crostini, crackers, pretzels, and/or fresh cut vegetables for dipping.

Notes & Tips:

Make it dairy free and vegan by using a plain dairy free yogurt in place of the plain Greek yogurt.
