Ingredients:
- 2 ripe, fresh avocados, halved, pitted and peeled
- 1/3 cup plain, unsweetened Greek yogurt
- 1 clove garlic
- 1 green onion
- 2 Tbsp. lemon juice
- 1/2 tsp. lemon zest
- 1/2 tsp. salt
- 1/4 cup pomegranate arils
- 1/4 cup chopped walnuts
- 1 oz. crumbled goat cheese
- 1 1/2 Tbsp. balsamic glaze
- Fresh thyme (for garnish)
Instructions:
- Add the avocados, Greek yogurt, garlic, onion, lemon juice, zest, and salt to a food processor and puree until smooth.
- Spread the avocado dip onto a serving board and top with pomegranate seeds, walnuts, goat cheese, and balsamic glaze.
- Serve with crostini, crackers, pretzels, and/or fresh cut vegetables for dipping.
