Ingredients:
- 1 large, sweet potato, sliced into 1/4-inch rounds
- 1 Tbsp. olive oil
- 1 ripe, fresh avocado, halved, pitted, peeled and mashed
- 2 Tbsp. feta cheese crumbles
- 1 Tbsp. pumpkin seeds
- 2 Tbsp. pomegranate seeds
- Fresh rosemary leaves, for garnish
- Salt and pepper to taste
Instructions:
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet.
- Bake for 20–25 minutes, flipping halfway, until sweet potatoes are golden and slightly crispy on the edges.
- Remove from oven and let cool slightly.
- Top each sweet potato round with a layer of mashed avocado.
- Sprinkle with feta cheese, followed by pumpkin seeds and pomegranate seeds.
- Garnish each bite with fresh rosemary.
- Serve immediately and enjoy!
