Ingredients:

  • 1 large, sweet potato, sliced into 1/4-inch rounds
  • 1 Tbsp. olive oil
  • 1 ripe, fresh avocado, halved, pitted, peeled and mashed
  • 2 Tbsp. feta cheese crumbles
  • 1 Tbsp. pumpkin seeds
  • 2 Tbsp. pomegranate seeds
  • Fresh rosemary leaves, for garnish
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet.
  3. Bake for 20–25 minutes, flipping halfway, until sweet potatoes are golden and slightly crispy on the edges.
  4. Remove from oven and let cool slightly.
  5. Top each sweet potato round with a layer of mashed avocado.
  6. Sprinkle with feta cheese, followed by pumpkin seeds and pomegranate seeds.
  7. Garnish each bite with fresh rosemary.
  8. Serve immediately and enjoy!
