Ingredients:

  • 1 small whole wheat tortilla
  • 1 Tbsp. peanut butter
  • 1/4 ripe, fresh avocado, halved, pitted, peeled and finely sliced
  • 1/4 medium-sized Granny Smith apple, finely sliced

Instructions:

  1. Spread peanut butter on tortilla.
  2. Place avocado slices on top.
  3. Place thinly sliced apples on top and roll the tortilla up.

Notes & Tips:

Serve with the rest of the sliced apples. If packing for school lunches, sprinkle freshly squeezed lemon or lime juice on apples and avocados before assembling tortillas to prevent them from browning.

Substitute peanut butter with almond butter or any other nut butters.
