Ingredients:
- For the Guacamole
- 5 ripe, fresh avocados, halved, pitted and peeled
- 2 Tbsp. lemon juice, fresh
- 1/2 white onion, chopped
- 1 ripe Roma tomato, diced
- 2 garlic cloves, crushed
- 1 cup Cheddar cheese, grated
- 2 green chilies, diced
- 1/3 cup fresh cilantro, finely chopped
- For the Presentation
- 1 box Town House focaccia tuscan cheese crackers
- 1 head of celery, outer stalks removed, leaving only the heart and inner leaves
- 7 oz. jar of olive tapenade
- 1 edible ink marker
Instructions:
- Guacamole:
- Gently mash all but one of the avocados with lemon juice in a bowl, leaving some chunks.
- Gently stir in remaining ingredients.
- Dice remaining avocado. Fold into the guacamole and serve immediately.
- Presentation:
- Fill rectangular shaped servings dish with guacamole.
- Break apart the heart of celery into individual ribs, keeping leaves attached, and place in the top corner of the dish, standing up in the guacamole to look like trees.
- Use the edible ink marker and write the letters R.I.P. onto 7-9 crackers.
- Arrange the crackers into the guacamole, sticking up, to look like tomb stones.
- Finish by placing a tsp of olive tapenade in front of each "tombstone" cracker and around the celery "trees" to look like dirt.
