Ingredients:
- 2 cups peas, fresh or frozen
- 1 large egg
- 1/2 ripe, fresh avocado, halved, pitted and peeled
- 1/2 cup onion, finely chopped
- 2 Tbsp. parsley, finely chopped (optional)
- 1/2 cup breadcrumbs
- 1/4 tsp. salt
- 1/4 cup shredded Mozzarella or Cheddar cheese
Instructions:
- If using frozen peas, thaw and squeeze out any excess moisture. Add the half of the peas and all the remaining ingredients into a food processor and pulse until combined. Stir in remaining peas.
- Spray and heat a non-stick frying pan over medium heat. Use hands to form desired nugget sizes. Cook in batches (leaving space between each nugget) for approximately 1 minute each side or until golden and cooked through.
- Let cool and firm up. Serve plain or with dipping sauce of choice.
