Ingredients:

  • 2 cups peas, fresh or frozen
  • 1 large egg
  • 1/2 ripe, fresh avocado, halved, pitted and peeled
  • 1/2 cup onion, finely chopped
  • 2 Tbsp. parsley, finely chopped (optional)
  • 1/2 cup breadcrumbs
  • 1/4 tsp. salt
  • 1/4 cup shredded Mozzarella or Cheddar cheese

Instructions:

  1. If using frozen peas, thaw and squeeze out any excess moisture. Add the half of the peas and all the remaining ingredients into a food processor and pulse until combined. Stir in remaining peas.
  2. Spray and heat a non-stick frying pan over medium heat. Use hands to form desired nugget sizes. Cook in batches (leaving space between each nugget) for approximately 1 minute each side or until golden and cooked through.
  3. Let cool and firm up. Serve plain or with dipping sauce of choice.

Notes & Tips:

Nuggets can be stored in an airtight container for up to four days in the refrigerator. They also reheat and crisp up well from frozen either in a skillet or on a parchment paper-lined baking sheet in a 400°F oven.
